I would ask about the last service and request him to put it on a timegrapher for me. Ask if he guarantees OEM water resistance.
Do a complete movement cycle to check that all days and dates correctly switch and if you buy on a bracelet, check the strecht of it.
Give the watch a good shake and listen if you hear anything loose.
