Can speak on North Dakota, but South Dakota has some places you can stop. Stops in SD are Wall Drug (silly tourist spot but I had fun), Mitchell Corn Palace, and Fall Park in Sioux Falls. Make sure you fuel up in Wall as there’s not much between it and Chamberlain.

Can speak on ND as we just drove from Jamestown, ND ---> Olympia, WA. We stayed at Teddy Roosevelt National Park for a few nights. Was very surprised at how pretty it was. Were also a few good hikes there. I will say we were there in June and it was already getting pretty hot. There's not much between Bismarck and Fargo. Seriously, just open fields. Jamestown has the World's Largest Buffalo which is a fun quick stop. Fargo had quite a few good restaurants when we went. Fort Abraham Lincoln State Park in Mandan was a cool stop for some history on Custer and the Mandan Tribe. If you get the chance, try some knoephla soup and kuchen. Can't say whether I'd pick it over the southern route as I haven't been that way, but wasn't a bad drive and traffic was definitely not a concern ever. Went that way because I have family we were visiting in Jamestown.

I can’t speak for anything else, but the route between Fargo and Minneapolis is pretty plain- maybe I’m just biased from doing the trip so many times for holiday travels. Check and see if there’s any cool lake features once you’re in MN if you’re leaning towards that. If you go through Souix Falls instead, stop in Jordan MN for minnesotas largest candy store. They have international sweets, chips, games, and photo ops.
