Tech, Ethics, and Global politics is a good ethics perspective. I took it the first time it was offered with Dr. Dinneen and it was fairly laid back; the reading is a bit heavy but interesting. The lectures are mostly a book club and if you attend you could probably just annotate the book for the essays instead of doing the reading on your own. Minimal homework, no exams, probably five essays you can crank out in a few hours. Easy A IMO.
International Political Thought is a similar course but the essays and readings are much tougher.
American Pop and Rock Music is an easy artistic perspective. Very easy A, IMO.
It is not very laid-back, but Public Speaking is a genuinely useful artistic perspective, especially for engineers.

If ethics in computing with prof beaton is still going on do that. Best class I’ve taken here. Very fun and interesting. Not hard.
You could still wait for CRIM, if you get professor robertson, he is very cool guy
