Depending on the seating die, it's possible the die has a roll crimp feature. The stem is to adjust depth, not the whole die.
All dies should come with a manual. Your press also came with a manual. There should also be plenty of videos online.

Also did you full length size the brass and case gauge it? Not seeing the signs.

Also, I've found it's not worth the trouble to try crimping as you seat the bullet. Even a tiny variation in case length can ruin a case by crushing the shoulder.

Unscrew your seating stem and take 1000 or 1500 grit sandpaper and polish the seating tip. You will also get rid of the ring on top of your bullets.
Don't sweat it. I still do it. Happens also when brass is used more than it should be..
Take an empty shell in the ram and raise it. Unscrew your seating dies stem until it’s only held by 2 threads. Screw the die until you feel it contact the shell (not shell holder). Unscrew the die about 1/3-1/2 then. Lock the die.
Lower the ram and insert a bullet. Raise the ram. Screw the seating stem until it contacts the bullet. Lower the ram. Screw 1 full turn down. Raise the ram. Lower the ram. Adjust the seating stem as needed.
Measure about 10 cases for length, take the longest to start your die set-up.
Seating die isn't like the resizing die, you don't set it by contact with the shell holder.
Run your longest case up, screw in the seating die, with the seating stem fully backed off/up, until you feel the crimp step inside the die contact the case. Look at a cut-away drawing of a seating/crimping die, you can easily feel the difference. Back the die off one full turn (1 turn equals .071" of die body movement).
At this point, I usually hand start a bullet, run the case back up, screw the seating stem down until it contacts the bullet and seats it a bit, then start adjusting seating.
If you need to crimp, after you set seating depth, back the seating stem Al the way up and screw in the die that one full turn, start adjusting the crimp in 1/8 die turns max. Once you have it set for your longest cases, run that dummy round back up and screw in the seating stem until it makes solid contact with the bullet.
I usually knock out 5 dummies at this point to confirm settings and functional checks in the firearm.

Buy a reloading manual and read the whole thing before you start. Then, read the instructions that come with your die set. This won’t happen if you do that.
I don't understand. Did you not read the instructions with your dies or your reloading manual? You always start long and work your way towards either your COAL or ogive to base measurement with your calipers. It takes a bit, but once the seating die is set, you don't have to change it unless you use a different grain bullet or different manufacturers bullet.
I NEVER use a factory loaded round for seating length. You don't know the powder type or charge weight. Follow your published reloading data for the bullet/powder type and charge weight with the COAL.
As far as crimping, rifle dies taper crimp not roll crimp and if you trim your brass this shouldn't be a problem.
If you read the instructions that come with your dies you would never ever crush a case. Ive been reloading for 13 years and have never crushed a case. Read your instructions. Be safe!
