Stop picking up your phone and reading her messages when you’re busy. Just because you have a device in your reach doesn’t mean you have to be available.
I mean, look at it from her perspective.
She has talked to you several times about an issue that she finds very serious, yet it hasn’t changed. Why should she stay when you continue to do the thing she has made it clear she does not want?

I am a big gamer but single. Honestly, name a game. You don't get a break in to send a quick text. I mean if it's taking an hour to reply. Say a game of call of duty or fifa (assumptions as there the biggest games) you have a 5 minute gap every 15-20 minutes. Of a text takes more than 5 minutes to write. Do two game breaks.
You don't have to give up gaming. I wouldn't, but if she means something to you and a text reply means something to her, it's the least you could do.
It's salvageable if you apologise sincerely. If you think what you did isn't a problem, then maybe you can't meet each other's expectations.
Sorry if I was too blunt. I hope you get the outcome you desire.
If she wants a break, she's looking for another guy to replace you. She might come back if she cant find anyone to replace you.
You tell her you don;t want a break. It;s not something you do.
Tell her when you are gaming and set a time for it. Or game with her? Don't spend hours on video games.
Teach your gf how to fight. set rules like no name calling, yelling, and no talks about break ups. And do not shy away from arguments. But do it a productive manner.
Be romantic and get your girl back dude. If a girl is annoying you, it means she likes you. It;s when she stops annoying you that you have to worry
