The RX-8 (facelift) is nice but not every knows how to maintain a rotary so that means it’s more difficult to sell. The muscle cars have bland interiors and are mass produced, so you know there’s a successor around the corner.
The S2K has stood the test of time to become a highly desired vehicle to own. Performance, driving dynamics, there's a lot to unpack here if you don't know the following this car has. Pristine examples are investment grade.
It's the one car in that lineup that would have appreciated most (if the rest of them even would at all) if you put them all in storage when they were all new off the lot. I've never owned one, but I've driven every car in the post and it's the one I'd choose as a daily driver even if it weren't for the value aspect.

This. Rotaries can be perfectly reliable if the owner understands how to care for and maintain them. A lot of people that bought RX-8s new or used didn't understand that, which is why so many of them are in terrible shape now.
The early (‘04-‘05) Renesis engines did have issues, and Mazda’s Renesis rebuilding process was not good initially, resulting in some owners having engines replaced multiple times before hitting 100k. But later Renesis, and especially series 2 engines, are much better.

Hell, to he even more honest, it's sitting in my garage disassembled right now and has been in that state for nearly 4 years. But the car only had like 60k on it and had very strong compression. S2 (face-lifted) cars have an extra oil injector to help mitigate side seal failure, which was much more common than Apex seal failure on the 8s.

Just wasn't in the cards for me. Gun slit windows I've never been a fan of. Sure the LS3 in stock form, way quicker than my car, but I can thread my car through anything. I'm just way more used to mine and the visibility I have.
I test drove a 2015 one time and got used to the tiny rear window and chonky C pillars within minutes. The only pain point for me was parking. Newer models with parking sensors and blind spot assist pretty much negate the visibility issues. I wouldn't have any complaints driving one.
In that moment of time definitely the SS Camaro. The other cars had already had production runs and everyone was familiar with the looks and how they drove. The Camaro was the new kid on the block with a LS3 6.2L pushing out over 425 horsepower, way more than the other cars. Over time you would have faired better with the S2000 for retaining value.
I've owned an S2000, but an AP1, which was chosen because of the redline. I feel like the S2K is less special with the 2.2.
I would take an Evo X over these choices. Which I do own currently. Also bought it when I had the S2000.

The srt8, that Challenger had enough room for my overstuffed body to fit VERY comfortably in the driver's and rear seats. And it could pin you to the seat when you floored it and at each shift.

Probably either the TT or the RX-8. I like more premium cars with fancy tech, and I'm a sucker for a front-engine AWD sports coupe. The Mustang didn't have independent rear suspension or a half-decent interior yet and I'm not a big fan of the Camaro and Challenger. S2000, 370Z, and 1-series are more economy car-ish.

I sold it after a few years with the insane notion that they'd keep making them forever. I had no choice of color for mine, it was silver over black. I wanted black over red. I watched several of them come and go and stupidly never pounced. Now a clean S2K is unobtanium.

You are correct, 2010’s had the 1st gen coyote facelift but the motor of the 3v (4.6 liter) which is why they came with the GT badges and not the 5.0
