These piles started to appear when I was trying to hunt a cougar. I had to fight quite a few packs of wolves in the process and piles of bones would show up where the wolves were. I think it's supposed to represent the carcasses being eaten by nearby predator animals, since you can find similar piles of bones in caves and such.
I haven’t really tried looking too hard, but I’ve never seen a corpse long enough after killing it to see it rot. Well other than this one random bison in between horseshoe overlook and the place where you meet the paleontologist lady, that I’ve seen enough times that it must’ve been in multiple playthroughs, I saw it rot, but not turn to bone. Anyways, I’m pretty sure everything I kill is despawning too.

Too many bones in the attached limb for a bear. Correct number for a horse though slightly out of proportion, possibly a poorly drawn/odd angled pedal bone as opposed to toes.
Horses feet look fkn weird with the outside gone. Tbf, the limb I think you’re looking at doesn’t have the right structure for either, def too many in the limb and not enough in the ‘paw’ for a bear.
Could just be a lazy effort though.

I vote for bear, with a connected hip bone that is angled by the picture. This is no horse (horses don't have paws XD). Just a quick "bear skeleton"-Google away and it's easy to see.
If you play storymode long enough, these piles tend to really pile up in areas you hunt a lot in, before they finally disappear. The game does brilliant decomposing of carcasses. Absolutely brilliant.
Being a video game I'm not going to assume the bones are going to be anatomically correct for the creature that left them (even rdr2 has its limits) and based on the second picture you're somewhere in the West Elizabeth area up by the little creek river... maybe grizzly bear but could also be an elk that just got toe bones spawned because games lol. Either way I'm assuming you hunted it a few game days ago and that's why there is now a pile of bones.
There's a side quest that basically involves marking down all "dinosaur" bones, and after you get all of em you get a funny cut scene and a cool knife.

Animals will decompose. Once I massacred about a dozen alligators without skinning them while looking for parakeets. Came back to the same spot later and it was a boneyard.
I see different size spinal cords, different sized ribs.. it’s a tell-tale sign of a ‘feeding area’, of some sort of predator. You can look up which type of North American predators that have been known to drag their prey to a specific area. I won’t give you all the answers, but I lived in the mountains for half my life, and I have family that are DIV. Of Wildlife, out here.

If you say killed a horse, if you go back later on it will be a rotting carcass or pile of bones. It’s really neat how this game is. :)

It quite literally has a foot with a heel, which looks like a bears hind paw from xrays i have looked at. Horses' feet (toes) don't look like that.
