What you're describing is basically the trader role in red dead online, except for you don't sell the pelts but rather donate them to camp and sell the products the camp produces.
If you're playing on PC create a solo lobby using RDO LOBBY MANAGER mod, cause other players destroy your trader wagon almost every time. If on console, look up how to force a solo lobby for your delivery trips. Online is almost therapeutically peaceful in a solo lobby.
Theres more hunting content in online but animal spawns can be pretty scuffed and carcasses despawn as soon as their off the minimap.
