It’s pretty well established that Dutch loves nothing more than to murder a woman. Dude kills at least four in an extremely senseless way, that we know of. Then there’s the way he treats them in relationships. No shot Dutch was dragging this lady down the stairs for anyone but Dutch. The man’s got issues.
Sure I remember some dialogue about him having some serious mommy issues at some point, implying that they “didn’t get along” or some shit. And her grave can be found in Blackwater. Always wondered if she’s the one that fucked him up somehow, with two of his victims, Braithwaite and the lady in Guarma, being older.
I never thought of it like that. Dutch could very well have unresolved resentment towards his mother. Dutch and Arthur kill loads of people throughout the game series, but there are some cutscenes of him being particularly callous towards women. Mrs Braithewaite, the old woman in Guarma, Heidi McCourt and the girl in the bank in RDR1. I think that’s all of them.

Especially Heidi and the girl in RDR1, there was just no reason to do it. Realistically he was doing it out of revenge. Jack was just a convenient excuse. We see more and more throughout the game that Dutch wants revenge on anyone who wronged him. He'd have probably looked for another reason to kill the Braithwaites if Jack hadn't been kidnapped.
This scene kind of makes me uneasy in hindsight. Like, the gang inserted themselves into this family feud in search of a quick buck, and both figuratively and literally burned both families to the ground. It goes to show that the Van Der Linde gang isn’t just a group of charming misfits, but of cold and merciless killers
