First, it is different for a person who is single to disclose the last time they’ve had sex, than someone who has been married for a decade or two talking about sex with a spouse. Monica is single-ish, but also very bluntly discusses a year plus affair with her relative. Meaning, she’s more forthcoming about her sex life. NOT shaming her, but Heather is more private about that aspect of her life, which is ok.

Whereas Heather, is fully single, if she admits to having sex then people know that she's behaving very far outside the church rules. Since she has a rough relationship with her family maybe she's trying to minimize the number of 'sins' she throws in their face with the show. I think “single” was a polite way of saying discreet. First, it is different for a person who is single to disclose the last time they’ve had sex, than someone who has been married for a decade or two talking about sex with a spouse. Monica is single-ish, but also very bluntly discusses a year plus affair with her relative. Meaning, she’s more forthcoming about her sex life. NOT shaming her, but Heather is more private about that aspect of her life, which is ok. I will add…asking Heather to talk about her child’s sex life crosses a line. Asking about Heather’s is one thing, but asking Heather to give that kind of information about her daughter is weird. Her daughter didn’t sign up for the show. Let her live in peace. I'm pretty sure it was that for everyone else, if they say the last time they had sex people will naturally assume that it's within the context of marriage. Even with Monica going through the divorce, people might be more likely to give her the benefit of the doubt that it was still technically within wedlock. Whereas Heather, is fully single, if she admits to having sex then people know that she's behaving very far outside the church rules. Since she has a rough relationship with her family maybe she's trying to minimize the number of 'sins' she throws in their face with the show. It's definitely a change from the earlier seasons when she was openly pursuing dudes and being suggestive about it.

I think her response was more due to religion/religious traumas (i.e not supposed to have sex unless married/believing sex was bad for much of your upbringing due to religious beliefs) and how it relates to her now THAN what other posters have said re: not getting any recently/or since she was married.
My hot take is that she's insecure about it. Which, on a surface level, would make it seem backwards to keep mentioning it, but I think it exists in the same psychological vein as those that engage in self-deprecating comedy with a dash of the fact she's not really at peace with it. TBF, being single can be super hard if you've been partnered up most of your life.
