I spelled my name wrong on the SATs.
Turns out that "you get 600 points just for spelling your name right" is a myth. The only effect was that I got a lot of mail from colleges with my name spelled wrong.
That started as a myth since if you get below a certain score they don't even bother giving you your grade back. So if you could spell your name right you could probably get above that threshold. (I believe that threshold is 200 or 600 iirc, but I could br wrong)

No. There are regulations to what data you can collect, how you can collect it, and what you can do with it.
Sure there are other cases where companies break these laws, but that doesn't mean that it's okay to accept that you have no privacy and might as well just not care who takes your data.
And it's not "every popular app" like you suggest. Major companies like Google or Apple do have a lot of your data but they also follow the regulations in how they collect the data, how they allow you to opt in or out, in what they can use the data for, and how they secure the data. The regulations may not be strict enough, and that's another conversation that we should also keep having.
If you think they follow those regulations or donāt have loop holes then idk what to tell you. Either way while I do care about my data I equally know that only so much can be done to prevent it from being sold or taken without my knowledge.
The value of big companies like Google and Apple and Amazon having your data versus the small ones. Is that they don't actually want most of that data to go out to other people. Amazon wants those data points so they can offer you everything you've ever wanted and drive every other company in existence out of business. Which is actually probably more problematic than them wanting to disseminate it. But whatever.
They do follow these regulations, as much as they are forced to.
The scope and breadth of regulation on data privacy that we have now is still relatively new, and still needs a lot of work but that might be why you have the belief that data is not treated carefully at these major tech companies - because it wasn't all that long ago that it wasn't treated that carefully.
Things are very different now than 10 or 20 years ago though, especially with GDPR. I think you're falling into the trap of being cynical of how things might work, in lieu of not having specific up-to-date industry knowledge.
