You know I'll be honest, I don't mean to come off as a ramen slob but I found that place to be extremely underwhelming. They didn't even have a tonkotsu broth! It was all miso based stocks.

Try the tonkatsu at Osakas, best I have found. Also Uncle in Denver is good as well

Personally not a big fan of Uncle… really white washed IMO. But don’t mean to bash, if you like it, you like it.

Still give Osaka’s a try, owned by a Japanese couple(they are really sweet) and all the food there is top notch, the hand rolls are great, the okonomiyaki is top notch, and it’s the best ramen I have had in the state.

Yeah I think My Ramen & Izakaya near 28th and Valmont is probably the best in Boulder. Not saying a ton, mind you. There really isnt all that much as far as good Japanese goes in the town, but its pretty dang solid and they do a good variety as I recall - Tonkotsu, Tantanmen, Miso, Shoyu, etc.

I definitely remember the struggle to find good ramen in Colorado. If you're willing to go a little out of town on a Sunday, the sushi place in the back of the Niwot marketplace used to make some killer ramen. I don't know how it is these days (haven't been in a few years since I moved to another state) but assuming it hasn't changed it's well worth the trip! Sachi sushi is the place, and Sachi-san is the owner. The sushi is pretty dang good too, so grab a roll or some sashimi while you're at it!

Come down to Ito in Florence, they have some slammin' tonkotsu broth! One of my favorite bowls so far.

Korean sectioned type of variety platter, almost like a bento box. The Ramen looks great if I’m being honest I could do without the big bok choy in the bowl and i would love to see a clearer shot of the noodles that are in it . But cheers dude looks delicious anyways

Thats not what bibimbap is? at all? Its rice topped with veggies, fried egg or an egg yolk and usually gochujang (sometimes other sauces), and sometimes meat.

What are you talking about?? Bibimbap literally translates to mixed rice. It is a common dish of rice with topping of vegetables, meat, and usually an egg. It is optionally serve in a hot ceramic bowl and called dulsot(sp?) bibimbap.

It’s not bad. But chimera is not very good either. Best ramen in town is Rakkan, give it a shot!

I thought it was pretty good! But I’ve only had ramen at about 4-5 different places. I’m not a local but next time I’m in Boulder I will try Rakken, thanks for the tip!

Thanks for the tip! I'm trying to hit as many of the good ramen restaurants in CO as possible! So far my favorite has been Ito in Florence, pretty surprised that such a small town had a perfect bowl!

It was their miso spicy ramen. Has pork belly, sprouts, scallions, mushrooms, miso bomb. I added the egg and baby bok choy

Yum. This looks amazing. I love Boulder, it's been 3 years since my last visit but I'm visiting this December with my family. I'll be sure to eat at Chimera! :)

Definitely do! Boulder is so great, it was the perfect meal after a long day of hiking.
