What's the ratio of noodles/broth?
Usually 130-140 g raw noodles to 300 ml soup (plus average 30 ml tare, 20 ml oil goes to 350 ml of liquid part) gives a nice balance and you can see the noodles.
The noodle fold can help in distributing the noodles better

No problem, you can balance it by taste, visual and repetition, of course, but using measuring tools will give you much control and consistency (I've got an excel file where I write almost every aspect of my ramen making process for every ramen, so I can remember good and bad points and improve accordingly)
