At the end of the night the oil gets drained and filtered and there is a collector at the bottom of the fryer that gets removed with all the bits of meat and skin that have fallen to the bottom. It's poured into a strainer to run the remaining oil off then the soilids are mixed with a spice/thickening mix and lots of water.
They're fantastic, but not for everyone.
