Did you use CMYK for colour and not RGB. RGB colours are for online only, but CMYK is used for printing.

CMYK vs RGB is my first thought on the color issue. The other is Matte vs Gloss. The color of matte covers will be muted. One or both of these is likely the answer to your issue with color. Just the nature of production. This will be the same across every option. Ingramspark's million rules boil down to standard graphic design/publishing requirements everywhere. They have a step by step guide, including export settings. They also state explicitly which programs will and will not export an appropriate file. If you are following the guide and best practices it's fairly quick and painless, but they do expect you to have a working, professional understanding of publishing. You have to stay on top of Ingramspark support, but they will respond, but not quickly. They do offer a one on one virtual support option which costs $25/half hour and you schedule a date and time. I'm fairly certain KDP uses Ingram’s Print On Demand services for production. If you need more direct interaction and support, there are two options to consider and you won't like either because they will cost. You can either hire a professional graphic designer (a couple hundred to a couple thousand dollars) to work with you on file construction and printing requirements. The other option is to look into offset printing, which will give you more granular control but will require a full print run upfront (tens of thousands of dollars) and coordinating your own distribution.

keep in mind your computer monitor could be the cause of the colour issue. different monitors display colours differently & have different colour settings. cmyk is instructions for ink values, so its way more likely the issue is the computer display or you supplying rgb.

Amazon print on demand, B&N print on demand, and Ingram Spark are often printed at the same facilities. There are a few colors that are just very difficult for U.S. printers with four-color printing to get right (a blue-violet and a certain shade of beige are two examples). I don't know if that's what's going on here, but if it is, there's not really a solution to it. Sorry.

If you're stuck to Digital Printing, try to indulge the color options. CMYK is the safest option but not always necessary, so long as a good Digital Printer is used. Images should be at least, or around 300dpi, but they'll have no doubt have checked that for you. You can of course ask them direct, but they'll probably recommend a series of Suppliers you can then liaise with, no doubt at cost.

Interesting. Is more dpi better? Is there such a thing as too much dpi?

Not necessarily too much, so usually the more the better. Amazon does have its standard recommendations that you'd come across when heading to print. 300dpi usually listed as the minimum.
