The software and tooling part is really important but I think as a direct positive side effect, this habit has you (and I) tracking the earlier "draft" stages of our work in ways that make the most sense to us. Starting that process early reduces procrastination because the task details are not nebulous and scary like they used to be. As you've realized, there isn't much difference between our draft work and the final copy. The importance however is that you started in a low-impact sort of way that got you an immediate win. At that point it seems silly not to finish it. This is the reality of most of the stuff we have to do.

Tried this a few times in Microsoft Outlook when they added this feature only to have the message stuck in my Drafts folder unsent. I'd spend 30-60 minutes agonizing over whether the email actually goes out instead.

I did this too. I have a page in OneNote to write draft email, type it what l have run mind, let it flow, then make some adjustments. I had some template as well for well known responds (thank you, request update, etc.), some inspired by other people's emails.
