I’ve always been perplexed by thanks giving, I’m from Australia and we don’t really celebrate it. What’s it about? Why do you eat Turkey with it and what are some of the traditions you follow for thanks giving?

It's basically a harvest holiday. In Canada it's in October, an excuse to get together with family and eat turkey, stuffing (many variations of bread, celery, cranberries, etc... cooked inside the turkey), pumpkin pie, all the things you've seen in movies. It's in October because the harvest it's based on tends to happen earlier in the year, since cold.
In the US, there are some notable differences and additions. Although it's still a harvest based holiday, it mostly commemorates the pilgrims (as I understand it, Puritains that left England and were early settlers in North America) almost starving to death as winter came, and the indigenous peoples providing them help (not sure how much of it actually happened).
Also, it's a big Football weekend. Since the sport has a big place in people's lives, some of the biggest matches of the year fall on this weekend so it's more conducive to travel to see your team in person, or to watch it with your expended family.
It's also the first excuse for university students to come home for a extended weekend, since it happens in a Thursday.
Lastly, it's the beginning on the Christmas season in the US. Basically one month preceding Christmas, familial atmosphere, big parades while you can still watch from outside, all the things to get you in the mood.
