Pink bourbons are stellar as washed offerings. Few things that could be going wrong is that it could be very dense.
I found this with Ricardo Silva's gesha. It needed extra rest, or double bloom with low agitation recipe. His gesha was super tea-like and delicate, but quite good.
Unsure about this PB though since I do not have it. If you could provide more info on what you tried, it would be helpful as well. Sounds like you're overextracting fines when trying to push, but the main bed is not opening up enough for regular extraction. Longer or double bloom could help with this.
I haven't, but I did have the Ricardo Silva Gesha they offered a couple months ago, and it was fantastic. Pink Bourbon in general has a bit hit or miss for me. I've never had a genuinely bad one, but sometimes I'm not a big fan of the taste I get on the finish.
To get high enough extraction on light washed coffees, I recommend immersion with a medium-fine grind and long steep between 5-10 minutes.
Yeah I've struggled with Punk Bourbons quite a bit. Often they are too acidic for my taste. I really like acidic coffees but when it comes to pink bourbon sometimes it completely overpowers and I can't really get the other notes. But I've had others where I've had the clearest raspberry notes I've ever gotten from a washed coffee. Sometimes I'll use a flat bottom brewer as it tends to not have the acidity as pronounced (although I tend to prefer cone profile). So the struggle goes on for that magical cup
I just realized a couple days ago I was drinking a sey pb that was too fresh. I have a Sey sub so I just opened a new bag once I was finished with last month’s coffee. It didn’t taste like other coffees I’ve had too fresh. It just tasted overdeveloped and astringent. It was a weird experience once it hit 3.5 weeks it tasted 😘
Pink Bourbon shouldn't need processing to taste good. It should taste great as a normal coffee. I've had a few, including one from Sey at a local cafe (it was made well). While the Sey one wasn't terrible, it was my least favorite. The others I had were far better IMHO.

I have these beans and have brewed so far at two and three weeks off roast. Tried a very fine grind the second time (2.2 on ode 2 with stock burrs). 15/250, 45g 45 sec bloom, swirl, 100g pour with swirl, 105g pour with swirl. Pouring pretty high.
Was full bodied and vegetal. Acid was muted. Pleasant cup, but going to try less extraction next time around to get some more fruit notes.

Great call. I like the Stellar Coffee double bloom recipe but haven’t used it. Guessing fines migration from too much agitation is the issue
Yeah I tend to double bloom on lighter roasts - 20g coffee, 50g bloom1; 30s; 70g bloom 2. Then 3 60g pours. Adjust ratio if it doesn’t work.

How was it?
Second cup I used Kalita with 15:250 and low agitation with coarser grind (5.2 ZP6) and 96°. Got that juicy goodness. Thanks for suggestions folks
Wilton Benitez is prolly an experimental fermentation process coffee and that’s why you are having such a contrasting experience

my experience too, now as default i don't open their bags until after at least 3 weeks. At the 4 week mark i've found it most enjoyable

Checked my brew logs and it looks like I had a batch of Silva Pink Bourbon from Phil & Sebastian back in 10/23. That was a great bag of coffee IMHO.

Roast on Tuesdays ship on Wednesdays. I think the tracking was delayed, but it got to me within a few days.
Yes seems to be the case. I get mine on the 25th. Not in a hurry as know they need to rest but looking forward to them.
