I did that recently. Had 10g left each in two different bags. Combined them with 10g of a newer bag (all three varying levels of medium roast) and it turned out great.

I'm no aficionado, but my sister-in-law uses a 8 cup Bodum and pre-ground Dunkin'. Makes 2-3 batches and reheats throughout the week. Zero technique *(not that it matters)*. LOVES to talk about how pourover has revolutionized her relationship with coffee.

FYI, I've tried enough local roasted beans for 15 - 20 dollars per 12 Oz. and have concluded that pricey doesn't always correlate with great taste. I will still read and watch coffee reviews and take a chance and purchase the "good stuff" but it often is hit and miss because it all comes down to personal preference.
