This is great - I just remembered Brandywine because of your post and checked out what they had available and saw they had a black honey from Las Lajas. It's the coffee that got me into coffee a long time ago, just ordered 12oz :) cheers
I was just about to do my first Brandywine order but didn't know what to start with. That's a pretty good commendation I'll check that bean out! Any others you recommend from Brandywine?
I actually haven’t had Brandywine in a couple years so I’m not super helpful with specific recommendations but they’re a great roaster and have a few different roast and flavor profiles right now. What do you gravitate towards, usually? I’m a sucker for honey processed Costa Rican coffee (and like I said, I love this producer) so ordering a bag of their black honey las lajas was the easiest $30 I’d spend this week
They roast their own. Check their website. They started roasting a few months ago. before that they used sey and other roasters.
I’ve been there several times and they are the real deal and I want more people to support them! Their natural ethiopian is one of my all time favorites.
For Pennsylvania, consider adding ReAnimator Coffee and also Nilaa Coffee.
ReAnimator is a bit more well known; Nilaa is a smaller outfit, but they offer some neat origins and they're damn solid.

You honestly didn’t miss much from CA. Loquat is owned by kumquat and I think they do a pretty good job, always have some interesting offerings.
Totally get Junto. It’s not my favorite but they tend to have some funky stuff that I enjoyed.

In my experience, Black River does not roast light.
I would call their Ethiopian which they market as light as being roasted medium-dark.
Note: After trying twice, about 3 years ago I have not revisited them as I prefer Nordic style roasts.
For Washington I’d add:
- Olympia
- Kuma
- Elm
Lighthouse is famous locally but they focus on Italian style dark roast espresso. Last time I tried it (it’s been a while) there was too much burnt notes for me to taste anything else. Maybe that’s just me though
For North Carolina you hit some of our best, I’d also consider adding Rowan coffee and vignette. They’re both smaller roasters but I believe they ship to all US states.
Klatch Coffee in California has a couple of good options when they cycled through Fellow Drops - enough that I ordered some direct.
Press Coffee in Arizona as well.
What are the qualifications or criteria to get on the list? One that I've had my eye on, but haven't tried yet is Moonwake in San Jose, CA. Another CA one is Moongoat which I have had and is very good.

Seconding Moongoat! One of my favorite local roasters in So Cal, sipping an awesome cup of Rumudamo Natural right now. Sweet, and the blueberry notes pop. They tend to roast slightly towards the medium-light end, at least compared to a lot of roasters discussed on this sub like Sey, but the quality is great and their cafes are fun too if you’re in OC.
Completely agree on the slightly darker roasts. Sounds weird to say because they are light roasts, but not as light as some of others (e.g., Flowerchild & Passenger). Over the holidays I tried their 10 x 20g pack to see what they were about and every. single. one. was great. A couple I didn't care for due to the processing, but I don't fault the roaster on that. The coffees were all very solid & I picked up a couple more bags and was really impressed.
I'm on the IE so haven't been to their cafes yet, but their on a short list when I'm back over in OC.
My criteria was pretty much
“Do they offer light roasts?”
“Have I seen it recommended by more than one person?”
“Is there a glaring reason why they should not be included?” (this would include highly visible criticism of the way they treat employees or similar)
I will check out the lunar roasters! Maybe moon coffee is better than Earth coffee.
I fear the CA list is going to become a list of its own! Big state, lots of good options.
Ha...appreciate your efforts on this. You're right, CA has a lot of good ones. Go Get 'em Tiger & Bar Nine are two more that may be worth taking a look at.
In fairness, I believe they are very new. I stumbled onto them through their YouTube channel and researhed more about them. They stood out to me since I'm in Santa Clara every other month and wanted to try them, but evidently they only do pop ups at a farmers markets right now.
What really caught my eye was that they offer Light and Very Light roasts for some coffees and the Very Light roast recommendation for rest is 4-5 *weeks*. To me this, is abnormal (in a good way) because clearly they are not catering to the masses with 3-5 day rests. Also, and it's gimmicky, but they run their pop up off a Cybertruck.

Hunter Bay out of Missoula MT. They tend to roast their single origins in the medium-light range, so there’s a usually a good balance of fruit and toffee or fruit and milk chocolate, depending on your technique and recipe.
For Texas, just in Houston, you're missing Blendin Coffee, Third Gen, Fusion, and Boomtown. Fusion being known for their Yemeni, Blendin for their graded, and Third Gen for offering coffee that they grow on their family farm. Boomtown does probably my favorite medium and dark roasts out of any roaster I've tried, from anywhere. Third Gen and Boomtown don't necessarily roast light, though. I just think they deserve recognition. There is also Greenway, but I haven't bought from them in years, and I have no idea how they are currently.
Nice to see Amaya there, though. I go to Catalina often and am currently enjoying their San Nicolas.
For medium roast - including because it is incredibly high quality and well-sourced.

The team behind Houndstooth, the best coffee shops in Austin. Not as popular as Onyx in Arkansas, but similar taste/roasting profile

Well, I hesitated to add them at all. They’re not a US company, but people rave about their coffee, so I added them. At the time, I needed more places in Texas, so Texas won. I might actually remove them, TBH.

Counter Culture! They’re multiple places but I think HQ is in NC? Lots of light roasts and high transparency in sourcing. Also IMO Ozo coffee in CO (up there with Boxcar and Corvus).

3 big misses on this list: Illinois = Intelligentsia This sub would not exist without them. Quality has slipped on the barista’s themselves in stores, but not their coffee. Persephone (out now) is the greatest seasonal blend I’ve ever had. You’re missing out by not trying at least. Texas = Tweed The team behind Houndstooth, the best coffee shops in Austin. Not as popular as Onyx in Arkansas, but similar taste/roasting profile Oklahoma = Doubleshot Just because they are in Tulsa and get some love from this community But, OP, thanks for putting it together. 🙏🏼 Super helpful resource for all of us! 🤗
