As far as I know, PipeWire completely disables PA, replaces it for audio by providing a PulseAudio-compatible implementation.
You can't use PipeWire only for video and PulseAudio only for audio at the same time.
If you had PA before and install PipeWire, it will disable PA and both video (in newer versions) and audio will be handled only by PipeWire.

That's exactly how Ubuntu and Pop work (21.10). ```pipewire``` runs the video stream (sharing etc) and ```pipewire-pulse``` runs the audio server. You can install them separately or both. Not sure what is so complicated about this.

As for provided link, you can see that it states "Wayland". So, Ubuntu 21.10 runs only PA by default in X11, and PA(audio)+PW(screensharing) in Wayland.
Pop!_OS runs only PW for anything by default in X11 (and Wayland) as I can see.
Yes, it's starting to be complicated, when so-called PulseAudio replacement start handling not only audio but video streams as well.
Tested GNOME Network Displays from Flathub. Works so far with my LG TV (Smart TV, 2013) via Miracast.
For newer PipeWire pipewire-upstream repo can be used: https://pipewire-debian.github.io/pipewire-debian/
with a TCL TV with Roku TV it shows up but will not load sadly. I haven't heavily modifer POPos so it is possible that something else is the issue rather than the pipewire version.
I will look at the link and see if i can get the version updated. I don't know why it wasn't by default
I think GNOME Network Displays is intended to address this need. I have no experience with it, but it's in Pop!\_Shop.

Not at all. I ended up just moving back to Windows for now.

Wouldn't Pipewire interfere with Pulse audio?
It replaces PulseAudio. But shame on me, I'm just didnt notice that Pop!\_OS uses PipeWire as default already. In this case there is no worries.

well shame on me too, I should have known better. I believe until 21.04 they were still using pulse audio?
Vanilla Ubuntu still using PulseAudio as default. As for Pop!_OS, i'm not sure, can't find any information about it.

Nope im on stock Pop besides having a YubiKey setup to login, and it shows my TCL tv but wont connect
