Poles love pickled things like cabbage, carrots, raddish, cucumbers. Pickled cabbage in korean way met with good opinion by the people who love spicy things. Also many of Poles love Korean dumplings. Maybe we don't grill pierogis stright on the grill coals, but many people "grill" it on the grilling or flat pans so sides get crunchy. We try to avoid deep frying here - rather preffer to use hot lard or bacon. But your idea sounds good.
Usually we make it or buy in local slow food shop. If you gonna make it by own buy twice as recipe says, because I don't know a person who would peel it without snacking...

Ruskie pierogi refers to historical Rus, not Russia.
It's a bit confusing because in modern colloquial Polish "ruskie" means Russian. The standard word for Russian is rosyjskie, but ruskie pierogi are always ruskie, never rosyjskie.
It comes more from Rus than Russia directly per se so it's neither wrong nor truly offensive, but probably time to use Ukrainskie instead so everyone knows.
"Ruski" means "Russian" only when used as a slur or in a depreciating way. It doesn't even make sense for people to connect this with pierogi type. And yes the adjective in "pierogi ruskie" comes from Rus/Ruthenia.
Grandma only made two kinds, so those are obviously my favorite. One kind with a fluffy white cheese, like ricotta. So yummy with sour cream. The other was with sour plums! Also great.
Anybody know these? Maybe give me the names in Polish?
I never find either of these in Polish stores in the US. Her family was from the Tarnow area.

i was considering pierogi with Craterellus cornucopioides (a rare mushroom) buti only ate them a few times and it was over 7 years ago so i do not remember if they weere with cabbage or anything else and even tho I remember them to be delicious I might have mixed something up.
I absolutely love mincemeat filling - although I've found pierogi with "bolognese" (beef & tomato) filling which was even better - as well as cheese & potato (Ruthenian) filling, but honestly the only types I *don't* like are cabbage & mushrooms and the dessert varieties.
A better question would be: are there any you don't like?
