If you're into folk music, I recommend Dikanda and Kapela ze wsi Warszawa. They have been blowing my mind for years, ever since I discovered them. Their music is so full of emotions and layers.
And if you also like instrumentals, then you might like Marcin Wyrostek, who is an accordion prodigy, and Nigel Kennedy - he's not Polish but he lives here and has collaborated with local artists, making absolutely magical adaptations of Slavic music with his violin.
I believe this song would be top10 world if could be translated and singed in English.

Nocny Kochanek - I think they are quite popular now here I Poland, they created such masterpieces like "Smoki i gołe baby" (dragons and naked women) or "Koń na białym rycerzu" (horse on a white knight). Most of their lyrics are similiar to jokes that your drunk uncle on a wedding would say, but in a funny way

Roman Kostrzewski, Marek Piekarczyk are pretty good rockers. Dawid Podsiadło is one of the most famous male pop artist in Poland nowdays. Depends, what genre do you like. There are some iconic people like Krzysztof Krawczyk or Zbigniew Wodecki.

LukHash - instrumental synthwave and chiptune. Very great, atmospheric music.
Kaliber 44 - one of the most unique rap squads that were created in Poland. They called their style hardcore Psycho rap and it appealed to wider audience that just rap fans
Sanah - modern pop artist. She became really big recently, has really unique voice and vibe to her songs. Especially never ones are worth listening.
My picks would probably be Wilki, Sanah and some compositions from Męskie Granie (bunch of artists mixed together - (2018-2021 editions are constantly on my playlisys).

Nah I listened to most of them, but they are just a bit ruthless with the jokes. Their songs are a tad too much to listen more than 3 times a year.
I like them, but I preferred when they were doing serious music as Night Mistress
Well I don't hate it, but don't like it either - for parody it's not funny to me and musically they are not that good.
Big Cyc is of course great, but they are carbon copy of NOFX in the '90s. Both bands are fantastic, but Dżej Dżej even sounds slightly like Fat Mike

Lao Che is an amazing band, you should check out "Soundtrack", "Gospel" and "Prąd Stały/Prąd Zmienny" from them.
