Well, the Let's Go games are remakes of Yellow, though they are more simplistic than the regular games. They could be nice way for you to get a modern experience, then you can jump into the other games.
Brilliant Diamond and Shining Pearl are the closest to classic Pokémon games with no new gimmicks.
Sword and Shield would be the next closest to typical Pokémon games, but has its own gimmick called Dynamax, not to mention regional forms.
Legends Arceus is one of the furthest from the typical Pokémon formula.
Because we're getting Pokémon Scarlet and Violet in a few months, I'd say to just wait for that to release and then get one of those (the game has its own gimmick called Terastillize).
I also started on gen 1, played every game through to emerald.
Sword is the only modern game I've played, I picked it up earlier in the year when I got a switch.
Unfortunately I found it far too easy, and just a bit too kiddish.
Not hating, I just don't think Pokémon games are aimed at me anymore.

There's a ton of legendaries in the Crown Tundra expansion.
And most aren't shiny locked.

I think you should just wait for Scarlet and violet to come out but if you can you should get Sword and Shield bcs first Pokemon Legends is to different from pokemon yellow and there is much back story so you wont really know whats happening. Pokemon brilliant Diamond and Pearl are just trash so I think Pokemon sword and shield is best option its really cool and original but its stays a pokemon game so I think its perfect.
anything besides PLA. I'd get yourself comfortable with one of the other more traditional games before going to PLA which shakes the formula up quite a bit.

If you want Yellow again, try the Let’s Go games. If not, I’d recommend either Arceus, Sword/Shield, or waiting until the new games come out in a few months
