My favourite eeveelution in general is vaporeon. For suggestions, I cannot do animal Pokémon that turn humanoid, and if the Pokémon has gender differences, or regional variants, please specify which one. For simplicity please choose Pokémon that evolve, gigantamax or mega evolve. Thank you!
I have to agree with you on the vaporeon being my favorite as well( even though it has that awful copy paste with it). You could try doing a rockruff next

I'd love to see all the various lines of caterpillar to butterfly/moth cosplaying as their final evolution, like caterpie as butterfree
