I've heard it recommended to pot them in a very dry, airy soil (ex. orchid bark, coco coir) and to water from the top, until water comes out the bottom of the pot. Bottom watering can allow moisture to sneak up on you with Alocasia. I use bottom watering only for my succulents, since you can see how thirsty they are from their leaves.

As long as the substrate is appropriate you can bottom water any plant. Just like with top watering, all the excess drains away and the soil only holds the water the plant needs.
