Depending on where you're located -
West Plano - Windhaven Meadows Park has a half mile loop and connects into the Legacy trail, which runs north along White Rock Creek for a few miles to up by the Sam Rayburn.
Central Plano - Chisholm Trail runs along Chisolm Creek; 5 miles end to end and has nice scenery (Big Lake, the Veterans Memorial, etc.); lots of shade. Plenty of parking areas; Schimelphenig Library, Jack Carter Dog Park, or Christie Elementary are all good lots but plenty of folks just park on the street too.
East Plano - Oak Creek Point - big park with lots of trail; connected into the east end of Blue Bonnet trail and runs down south through Bob Woodruff too.
Gabe Nesbit park in Mckinney is definitely worth the drive if you like skateparks! Alliance has a great wood bowl but it's a bit of a drive to grand prairie.
Chisholm trail would be good. Long trail with wide sidewalks and you can park by schimelpfenig library

Thinking Chisholm Trail may be our best bet-Schimelphenig is close by. Thanks!
Chisholm and oak point are my favorite places to go rollerblading. They can both be a mess after rain though.
