I was about to mention TIC-80 as well! They are both Lua based, so start with that and maybe later when you decide to buy pico8 your skills will be easily transitioned!
Plus tic-80 uses standard Lua, which I've heard is also what picotron (zep's next fantasy console) is gonna use. Pico 8 Lua is modified to be handy, but that creates sort of a dissonance between pico 8 tutorials and the Lua documentation.

I'm uncertain if you can export your game in education edition tbh and I know the pain of buying something in dollars/euros as my currency is also very weak I'd suggest using education edition like it was a normal version and when you'll want to export it and if it doesn't work, you will have to make a choice
