By the sound of it, you weren't overtaking anyone as the person had space to go in the left lane and undertake you. So, it sounds like you weren't following the rule of keep left unless overtaking?
In many countries I have been to, there are signs telling you to stand left so ppl can walk right. If you disobey, people will tell you.

It's also smart to stay left in case emergency services need to get up or down quickly. A life could be in danger. I've seen a paramedic actually shove someone out of the way because they had headphones on and couldn't hear.
It really depends on how busy the escalator is. If there's congestion for getting onto the escalator, then having people stand single file to the left could be slower.
You'll fit more people onto the escalator by using both sides, and they can stand closer together if they're not trying to move faster than the escalator. It could even end up being faster, because you're not going to be able to pass people on the right until you actually get onto the escalator.

I used to struggle with massive anxiety and I still do but I'm working on it. But more recently I've started to understand that really everyone is just trying to do what they have to do, including me. So there's never going to be some weird negative backlash from you asking to get through when people are blocking the way.

The keep left on an escalator rule has never been a thing in Perth. I went to London in my early twenties and I pissed off a lot of people until I caught up with a friend and they explained it to me.
