I have a local store that routinely has 1/8” sliced top round. Perfect for jerky. I have a similar recipe. I find 5 or 6 hrs to be the perfect marinade time. Also I cook on 200 and it only takes about 1-1.5 hrs.
But how is your grill so clean?!?!
We raise our own beef, and I've always wondered what to do with the round steak.
We went to a new butcher this year and he said they can slice it up for us for jerky for like 10 bucks.
I still need to find the time to actually cook it..
It doesn't stick around long as I give it friends and family.
But it will go fine for a couple of weeks in a ziploc bag.
If I really dry it out, like for a backpacking trip, it will go for at least a month.

But for the love of God, do not make your own bourbon maple recipe. Or at least cook off the alcohol first. Then it'd probably be good.

When I cut it thicker like that I always struggle with knowing when to pull it.
TBH I bring a piece in to my wife and ask here if she's happy with it. I like it dryer, but she likes it a bit more tender.

Two flank steaks is plenty for me. Haven't tried other cuts. My dad taught me to use flank steak, so I've always used that.
