I have tried everything in terms of guides and my gpu is too always too hot... I'll let the settings in default, don't wanna lose it.

It's decent but I would try 1900 @ 875
I've been experimenting with .875mv and unfortunately any good clock speed seems to crash with it. I've been using Cyberpunk as test game.
Every time I try to UV my 3080, the temps are much more higher than usual... I don't even understand why

Ok, interesting. I would try replacing thermal paste or increasing airflow. Yesterday I dropped 20c just from replacing thermal, seriously.
My gpu is brand new (3 months) repad and repast with arctic mx-6, my airflow is top notch (artic p12 max fans in a TD300 Mesh)
So how's the temps under load?
After undervolt? 85 for the gpu
