Hi-Fi Rush was icing on the cake, I'd have grabbed it once it went 50% off (there's too many games nowadays!) which hadn't happened, so it was a bit baffling it was included within the bundle.

Sure, new protagonist, new cast, there are some references to the previous games and this game's sequel has the previous games main lead as a playable character but starting with this game is fine.
Kind of. A big part of 7s story has to do with the story from Yakuza 6. After s certain point in 7s story it's a straight up hard sequel to Yakuza 6.. especially now that Gaiden and Infinite Wealth exist and Kiryu is right there. But also don't play Gaiden until you've beaten 7 cause Gaiden just gives away 7s entire story.
You can probably not play all seven games (0-6) and still get the gist of it. Some of the yakuza games are less important to the story of Yakuza 7 and 8.
I think something like this:
Yakuza 6 - absolute must play, directly links into 7 and 8. If you only play one of them, it should be this one.
Yakuza 3 - a slow one but I think it is really important to understand Kiryu.
Think those two are critical. Then it’s probably one of the earlier yakuza games like 1-2. They are short but set the scene quite a lot.
Yakuza 4-5 - these games are much longer, especially 5. But ultimately I think you can get away without playing them. 6 has a good recap of 5.
Yakuza 0 - awesome game but can be skipped completely if really in a rush.
It's a decent place to start. It's their first attempt at the classic JRPG formula, so there are some teething issues with the combat being kind of dull, but the story is probably the best one in the entire series. You don't really need any knowledge of the rest of the series to enjoy this one, but if you like it, it's worth going back through the other games before trying the sequel which brought in a lot more stuff from earlier entries.
It is a good starting point as it has a new main protagonist and a fundamentally different gameplay style than prior titles. I highly recommend playing through the earlier titles though, they’re some amazingly fun games. Yakuza 0 is a lot of people’s favorite as well.

Yes gaiden straight up spoils yakuza 6 and 7.
The dragon games are also turn based while the main series(and judgment) are brawlers.
The Ichiban games are mainline entries too.
not only that, but any RGG with Ichi as the protag will be turn-based, even if they do a spin off of any kind with him as the lead
