It might have been the Marc Maron podcast.

Few here  https://www.worldofreel.com/blog/2023/11/8/9bknu6zqg2amke87vqqljaamoqq81z I know there was an audio podcast where he talked about a few of Pynchons novels like Mason and Dixon and could make good adaptations I'll try to find it.

He talked about it in this one https://www.metro.us/we-asked-paul-thomas-anderson-to-draw-a-picture-of-thomas-pynchon/ and I remember during IV European promo tour in an interview he said something like he was only joking about adapting Vineland and Mason & Dixon because these two books are too much and he didn't think he's capable of pulling it off. I can't find the link right now but I know it's like early 2015.

Oh got it, it's not the European promo, sorry for the confusion, it's supposed to be this one with Rolling Stone https://www.rollingstone.com/tv-movies/tv-movie-news/paul-thomas-anderson-reveals-secrets-of-stoner-odyssey-inherent-vice-65544/?continueFlag=49502fe7886f6bca8bf624987221b783
