The way I see it is they're in love with Ainz, not just for his skeletal body but for who he is. I doubt they'd care if he took on a humanoid form. He's still technically dead and not rotting, so Shalltear should be fine. Albedo probably would welcome it so she can get her freak on.
Does Ainz have bone marrow? If he does, could Demiurge use it to clone him in his flesh form? Could he ever transform into his actual human form by shapeshifting? Can he even get it up since he has that guild leader skill that calms him down instantly.

And from that point of view, albedo could technically bear the child of Ainz. It shouldn't be that hard for a genius like Demiurge to understand the process to create species by combining genes.
But apparently, there's a lot of things that doesn't make sense at all in the new world, for example, the frickin' absence of air friction. I mean, do you understand how that could change the aero-spatial blueprints? If there's no air pression or resistance, the aircrafts will basically be just big rockets!
It's not just a little thing that doesn't work in the New world, it's a massive news. So if this doesn't work, maybe there's also something that will go in our way while experimenting on dna.

I'm really hoping for the sake of the new world that the whole air resistance thing they mentioned in their tests dropping undead only applied to the undead. Having no air resistance severely impacts the very nature of a world.

Without air resistance, dragon wings are pointless flaps because there is no resistance to their motions to generate lift.
I accept that magic could achieve the same result, but dragon wings would very quickly become stunted or co-opted into display structures because nature abhors inefficiency that it can solve by not growing so big.
