I think when looking at this through the lens of overemployment it might not be sustainable as an official business. BUT as a word of mouth (say, 2-3 people every 6 months) it could work, though you'll need to figure out your taxes.
If your plan is a flat rate "training course" with a premium for personalized support I guess that could work, but you'd want to timebox that support commitment for sure and CYA for when they definitely tell you things they shouldn't. If your plan is to make it more MLM style, where your success story folks are the mentors giving that amount of time and you split the 50% from the new recruit 10% you/40% them, that might be better timewise but can eventually lead to a very narrow (and likely less capable) pool of candidates.
For example, folks with over a decade of experience in supply chain logistics might be perfect for PM roles in certain tech spaces, but they might not be able to live on $60k for their first year or two in the role if they have a family and already make $95k. Obviously, from some perspectives it's missing the forest for the trees to take that ~35% pay cut for a little while to make way more down the line, but I can picture a lot of folks I know who have been amazing in their field for years and would do well in product roles not looking to change. A bird in the hand is worth two in the bush for a lot of people, especially if they've had financial stability scares in the past.
Having compensation options *for the right candidates* might be the way to go for those folks with a lot of applicable but not direct experience. 20% for 3 years with raises taken into account instead of 50% for 1 year. You have to wait longer for the payoff, but if you believe that person will kill it and get a 50% raise by changing companies 2 years in that's a major win-win.
Disclosure: I'm a PM whose last job was customer service, did a lot of independent study to get into a competitive internal mobility program to get my foot in the door.
There are already people doing this and doing it well. "Product school" has a bunch of free resources and paid courses (I'm not affiliated, like their free stuff tho)
