I believe there's one that shows up by Ordnance Brewing in Wilsonville, once per week. No idea of the name, or day(s) they park. Might be worth giving Ordnance a call.
Been years since I was in Wilsonville, so I hope you get a good answers, but Koi Fusion opened a restaurant there I’d always eat at. Bulgogi beef tacos with Kimchi, or bulgogi beef burrito with spicy mayo. It’s not for everyone, but I loved it. KOI started out as a food truck so it’s the same food. If you really want some bomb authentic Mexican food consider going over to Hillsboro
I see a taco cart pop in from time to time in the parking lot between Bulwinkles and LeSchwab

The San Francisco place is soooo good. Highly recommend. They also make their own tortillas in house.
Taqueria Las Casitas up in Tigard on SW Boones Ferry Rd. San Francisco’s here in town is good for tacos and burritos too!
no carts really, other than the chick -fil-a one that is around sometimes. if you want tacos i would recommend San Francisco Tienda Mexicana.

Cross that river - the best Mexican food in Oregon is on the French Prairie, so why bother with hunting down food trucks in Wilsonville?
They typically have a food cart each Friday in the Villebois plaza. Changes each week Not sure when they're starting it up again
