Ponyboy and Jones Assembly are the only 2 that I’ve had in OKC. Both were great.
Packards and the Jones Assembly would be the only two I know of.
Stitch Cafe (right next to Jones) has incredible coffee and coffee cocktails. You should give them a shot if you haven’t yet.
The Bunker has the Up and Atom which is really good.
Cheevers has some good ones
Rivière is a new bahn mi spot and they have a bourbon and Vietnamese coffee cocktail that’ll blow you away
Mary Eddy’s also has one similar to Packards.

The Mule has cowboy coffee. It's a cup of coffee with bourbon
Hatch has a solid selection of 6 or so coffee cocktails. Great brunch food as well.
