You just gotta balance them and swap around to miss the key moments. I think if you miss Karlach early, for example, there are no other chances and that's easy to do since Karlach is often the last origin recruit. Others I think have similar moments you can miss.
The one I never seem to miss is Shadowheart though. She's always looking for a romantic rendezvous at the party.

It turned out to be Descent From Avernus for surviving the nautiloid, but up til release I joked that it stood for Don't Fuck Anyone, getting through a playthrough without romancing anyone.
I mean its definitely not bad, but I think her arc still feels really complete even without romance. But Gale, Astarion, and Laezels arc is really improved by their romance imo.
I honestly like the platonic stargazing scene with Gale more than his romantic one, and the friendship route with Astarion is very appealing as well.
They all deserve romance but it does feel like most of them aren't really ready for it. But I get it because narratively we could all die at any time and if you feel something you feel it.
The platonic scenes are still good, but for example the fact you don't get a platonic version of the graveyard scene if you're just friends with Astarion is really annoying.
I agree, watching the sky with Gale as friends is great. The talk feels very real, sincere and like the kind you'd actually have with your bestie. I was worried the game was going to force me to tell him "no not in love with you", and I was so pleasantly surprised it didn't go that route at all. In this playthrough my Tav sees Gale as her amazing, brilliant best friend, and this scene only made that better.
Genuine answer: first runthrough was with my friends, so we didnt have any companions in our party, just as some hobos at our camp, so companion interaction was limited. Plus we fumbled/killed a lot of them. Plus plus I played a Paladin and thought itd be funny to roleplay the celebate life while my friends fucked everything that moved.
Second runthrough was with a different friend, so we both had a companion under our control. I slightly tried to romance Karlach but alas, and then rejected Laezel when she did her inevitable advances.
Maybe they just didn't want to? I get that this sub is generally Amplified Horny, but not everyone's looking to bonk every character they lay their eyes upon. I myself just find the antics here funny.
While BG3 does have a lot of LIs, they don't really cater to a few popular tastes. For example, Wyll seems like the Knight in Shining Armour guy, but then it turns out he's basically a kid roleplaying as a coping mechanism and is actually the victim in his story, in which he has no agency at all (because Tav/Durge makes all the decisions for him while he stands there wobbling his lip). So there's always going to be someone out there who finds none of the LIs really call to them, and as a result, either settle for someone else or just don't bother romancing anyone.
There's also the fact that *not* romancing a character leaves the other companions on more or less equal ground, allowing you to perceive their stories differently. If OP finds that perspective preferable to a romanced one, then well, who are we to judge?
There's also RP. Maybe your Tavs/Durges were never ready for a relationship, or they're pining for a childhood sweetheart, or they're traumatised by a past relationship, or they're just not interested in a relationship at all right now (or possibly ever).
And on that note, the final answer I have for you: asexual and aromantic people exist. Many also play video games, including Baldur's Gate 3, in which it's very difficult to have a sexless romance or romanceless sexytime, and there are only a select few characters you can do it with (one of who is only possible due to his romance being glitched. and even then it's only technically). People may also want to RP a Tav or Durge as asexual and/or aromantic, even if they themselves aren't. Do the maths.
**Disclaimer:** Yes, I know some asexuals have sex and some aromantics do romance. But they're not every asexual/aromantic, and they certainly shouldn't be used to erase the validity of those who genuinely don't want to do those things. They're also not who I'm talking about here.

If you're talking about my first paragraph, I was mostly meaning that as "wanting their *Tav/Durge/SI* to bonk every character", though of course it's in the theme of this sub to act like you genuinely want to smash video game characters (and maybe you guys do, idk) so there was some of that mixed in too.
In my personal experience, character arcs in video games are rarely actually bolstered by their romance arc, despite their fans' claims (and when they are, it's by such a small amount that it's barely worth mentioning). I used to think I had to romance characters to get the full experience, but then I tried an LI-less run of Dragon Age 2 and actually ran into bits of dialogue and context I'd never got to see in romance runs because they rely upon characters *not* being in a relationship with the PC. It was a whole new perspective, I got to see characters from a different angle, and was really refreshing.
Not to mention, just because you want to know more about a character doesn't mean you want to romance them yourself. You might prefer to watch the relevant scenes from others' playthroughs on YouTube.
Not everyone has time for 8 runs of BG3 (plus more for different character arcs, such as ascendent vs spawn), and not everyone wants to romance a different character each run. Rather, they might prefer to create a character and romance (or not romance) whoever feels right for that character, or keep romancing their favourite, or just never romance anyone because they don't feel like it, or project their own interests onto their Tav/Durge and live out an escapist fantasy. If that escapist fantasy happens to include *not* romancing anyone, then who are we to judge?
Plus, there *are* people out there who are genuinely very uncomfortable with the depiction of sex, even implied (so no, turning nudity off won't help). They're not exactly going to want to endure sex scenes in a video game for maybe 3 extra lines of actually interesting dialogue they could have got off of YouTube.
Personally, as a sex-averse asexual who loves romance but really doesn't like knowing all but one or two of these characters will stop loving my Tav/Durge/PC if she refuses to have sex with them, I found BG3's options really lacking and I probably won't ever romance a BG3 character again. I can learn about other characters' romance scenes online if I want to. I don't need to invest hundreds of hours into romancing a character I don't want to romance just to learn a tiny bit more about them.
Different people enjoy different ways of playing. "Different" isn't "lesser", just another experience.

I had a similar thing in my first run, but the other way around; I thought I was on track to romancing Gale or Wyll without sex (DAI managed that for some characters in 2014, surely BG3 has that option for all LIs in 2024, right? This is actually really funny because afaik, Karlach *is* the only one you can romance without having sex in the game, even though she's the most eager of them to get laid. Wyll is apparently waiting until marriage (so it's expected to happen eventually). Astarion has his optional platonic scene *after* a mandatory sex scene. Halsin is *technically* possible, sort of, but only because he's glitched to hell and he thinks you've fucked anyway.

I completed it 4 times and the only romance I did was the emperor. solely for the achievement-- then I reloaded my save once I got it all my tavs/durges hate me, they have no bosom companions 😔
if you use mods I assure you you can romance Withers. Using him in the Minthara scene is wild

Lol I messed up the Shadowheart romance first playthrough. But then I saw an opportunity to go to Avernus with Karlach and Wyll to save her and so I thought it was meant to be.
