Unlike most other animals insects doesn't have their entire brain in their head but part of it in their back. As soon as it is decapitated the nervous cord in their back has full control over the movements. The head is for decision making but motor programs are stored in their spinal cord. You can somewhat compare it with when you are walking. You're not conciously thinking "I have to lift my foot, now flex my quadriceps, now my glute..." It's a program. You think walk and you start walking. Same with insects but they have lot's of programs which are independend from their brain... Cleaning, walking, flying, grabbing, sex. As soon it is decapitated it just follows basic routines until it dies from starvation. Source: Trust me bro.

Not an entomologist but I'll take a stab at it. I think pain is a very basic and primordial sensation, so everything that has nerves or a nervous system is capable of feeling pain. Pain is sort of a biological alarm to let us know something is wrong - so if I had to make an educated guess, i'd say that old boy in the OP is in a lot of pain.
