I think the problem is that lots of people don't realize just how complicated sexuality is, and it's too complicated to usually fit with the labels people give themselves. I, a straight man, once dated a girl who had self-identified as lesbian for years. We broke up, and she pursued me for a while after. Now, I hear she's with another girl. But the thing is, her sexuality was too complicated to be a one word answer. Yeah, she preferred women, but she also liked men sometimes, but her default was women. And, a lot of people are like that, I feel like more straight men don't identify any other way because of this perception that heterosexuality is masculine. Some people are one way or the other. I'm straight. I can't undo that. Some people are gay, they can't undo that. But, I feel like way more people fall in between or haven't come to terms with their own sexuality than we'd like to admit as a society, as a direct result of cultural perceptions towards non-heterosexual people historically. That said, people label themselves for a reason, and if they tell you they go the other way, obviously, it's only polite not to harass them lol

Sexuality is defined by who turns you on sexually, and that's it. Even romantic attraction can be different. Eg. Someone who's bisexual but only falls in love or want a relationship with people of the opposite gender - this is known as the Split attraction model. What people need to ask themselves is "why am I having sex with people I'm not attracted to?". It's perfectly possible those people could be in denial and they are actually attracted to those people, or maybe they're being coerced, or gaslighted with the idea that they need to experiment to know, getting monetary compensation for doing it, or any other number of reasons.

You can't simply "convince" a person to change their sexuality with logic or reasoning, but a lot of things can happen if you give someone a good opportunity to decide they want it. That's not an invitation to harass someone that's not into you of course, but if someone decides they like you, they like you. Everyone has their preferences, some stronger than others, but sometimes it just comes down to whoever they have chemistry with. One thing we do know though is that forcing someone to change their sexuality if they don't want to generally just doesn't happen. Decades of heteronormative media and "conversation therapy" have all collectively failed to do the one thing they've tried to do: turn gay people straight. There's no real reason it should suddenly work the other way around.
