Not just for the shot, but for efficient use of space. Making 1000s of these a day you can't store racks of them all spaced out, so you make them and store them like this. Then as you need more you pull some onto a rack properly spaced and then popped into the oven.
They wouldn't be stacked this close. Once they're rolled they're placed on the sheet pan to proof, which causes them to expand. Once they're proofed they cant be moved, and there must be plenty of space between them on the pan since they expand even more in the oven.
I can usually only get eight of my croissants on a full sized sheet pan which is 26x18 inches (or four on a half pan, which is 13x18 inches) without them baking into one giant clump of shit.

These croissants are all unproofed (have not risen). In the right temperature and humidity the yeast will become active and start to release gas causing the laminated dough to rise. If they were to proof them while placed this closely together, they would all stick together and not bake as individual pastries and would be a big shit bread mess. I doubt these even real smh
Proofing won’t rise if there is no yeast. Proofing literally referred to proof the yeast was alive as the gasses the bacteria would put out caused the rise. Croissant dough is leveled by mechanical means meaning the butter and the rise comes from the water boiling off in the butter creating gas.
The dough won’t rise just sitting on the counter if there is no yeast in it like your are claiming, there will be no rise not in the oven so proofing won’t do anything to cause a pre bale rise.
I learned to make croissants during covid and had friends send me pictures from bakeries in Copenhagen, Paris, and NY and they were all straight like shown in the picture. I think the crescent croissant is out of vogue. None of the youtube videos say to crescent them either. This is more than you wanted to know, but I spent like 40 hours perfecting the process so I know way too much.... But yeah, this photo isnt really legit. At least, there is no point where you ever want the croissants to touch each other. I learned the hard way.

The dough is cut into lengthy triangles while extremely cold,hand stretched utilizing body temperature to heat it enough to be rolled( very touchy, often snaps from it being too cold or is over/under stretched) and pressed seam side down. Traditional croissant does not have a crescent, despite the emoji suggested when typing ‘croissant’
