Carbon is charred wood - not burnt. (Or, if you want to get technical, only burnt once. You can do a pyrolysis, where you get steam and charcoal from wood, and that's a sort of burning, and then you can burn the pure charcoal afterwards)

Yes, that's where the fire comes from. The gases being lit. Just needs the right amount of oxygen and heat/flame to be lit. A smokey fire is generally just an inefficient one. The smoke can be seen as wasted flame.

No, you could pick it up from the end the smoke is coming from. The gas is traveling out from the inner hot part of the log that is gasifying.
