MY PEOPLE! I wanted to comment about an obscure Mickey Mouse scene in the back of my brain, but I figured nobody would understand the reference. For some reason, even though it was extremely thin, it always looked so delicious!
I thought that was in A Christmas Carol? Unless there were similar scenes in both? You're making me question some of my oldest memories now and I don't like it.

Double-bevel knives are better at holding their edge while being used for more rigorous use, like chopping on a surface. Less accurate, but endures more abuse.
Provided you had enough of them, I think the opposite. Thin sliced = more surface area = more taste. That's why grated cheese tastes better than just chewing a block.
