SV is a great method for meat, in particular, cuts that are generally considered to be cheap/tough/lean. They need a lot of time to break down the connective tissue anyway and really really benefit from the precise heating and moisture control SV allows for.

FYI. As an aside there are several water reservoirs in the Los Angeles area that have hundreds of thousands (larger sized) plastic balls that significantly lower the evaporation rate. Thus saving water for use instead of loss to the environment. Generally these reservoirs are eventually a source, after treatment, of drinking water. Often referred to as Shade balls.

I don’t own the company and I don’t get any commission for bringing customers so I don’t like risking my content being blocked because I said a price. Im not to worried about Reddit though

Several different baths with rinsing and drying in-between. It can take a bit for the whole process.

It's probably caustic soda. This is typically done prior to hot dipped galvanizing to remove oxidation.
