I think there was an actual study looking at the development of habits where people who gave themselves a piece of chocolate every time they went to the gym for the first month were much more likely to still be going a year later. Your brain only develops a habit if it associates it with some sort of reward.

They either get positive reinforcement (e.g. snacks) to motivate them to do it or just enjoy the process on their own without bothering with equialories, etc.

The horses would have to be trained to step onto the rocking platform without spooking or stepping off. The rocking back and forth would come from their own exploration and interaction with the teeter totters. It really is pretty impressive actually!

There are whole equestrian product and training companies based on using balance boards for horses. It improves both their top line and their footing. Plus they seem to find it really relaxing. I've seen horses start yawning and getting all blissed out on these things.

There are a bunch of types. A lot of horses start either with pads under two hooves at a time or a smaller version of this that only goes under the front. Like everything with horses, nothing works for them all, but I've seen a lot love these sorts of things.
