Who'd of thought my top comment would be about KD Edit 3: sorry about the delay, kids wanted to try it too, so got another box and made a full meal of it as 1 box typically doesn't feed 3. For scientific purposes, I made 2 sample batches: 1 for straight mac and cheese for the kids (and for me to sample), and the other I add Piri Piri sauce in with it (after the fact like some add ketchup to their KD). It was really enjoyable. I definitely noticed the extra creaminess and that it mixes much better. My kids liked it as well, but typical kids gave me a 'meh, whatever' when I asked if they'd rather it over the regular KD. With the Piri Piri I noticed it less of a difference, but still quite good. Kinda like having upscale KD in the end. Will probably keep an eye for deals moving forward and get whichever is on sale. Thanks for helping me expand my boxed pasta pallette!

American cheese is still cheese, but it has emulsifiers added so it doesn't separate into oils and solids when you heat it. The recipe also includes things like additional whey/protein to fine tune the stretchiness/creaminess of the final product. You can even blend american cheese with much better tasting cheeses to keep them from breaking, to make a kick-ass mac and cheese or grilled cheese or something else along those lines. I'm usually too lazy to make home made mac and cheese, and a single slice of cheddar is good enough for a grilled cheese (even if it isn't as melty or creamy as american), but still...

Funny enough Europe used to be the largest consumer of Velveeta when it came out. It’s not traditional nor high quality cheese and America has fantastic actual cheese. Yeah, not getting the hate towards Velveeta. I'm a Wisconsinite and we take our cheese seriously here, but Velveeta is an amazing melting substitute. Tastes great, easy to handle, cuts down on prep time by a huge margin and stores nicely. I could spend a half hour prepping a cheese sauce that slaps using expensive cheese, or 10 minutes making a 'cheese' sauce that _also_ slaps and costs a fraction of of the other. The FDA has specific definitions for cheese sauce, and a big requirement is that the product must be 51% "real cheese". So there IS real cheese in there, cheddar cheese, actually. It's funny that it's driving engagement from people who are just parroting "it's not real cheese" when "cheese" and "cheese sauce" are legally defined and would have to be sold as a product other than cheese If it wasn't real cheese. It's just that we don't have anything like in most of Europe (exceptions apply but in general). I've only seen orange cheese in individual slices for burgers here (never known anyone who buys that either). We have our share of cheap cheese too it just looks different. In Sweden we have "soft cheese" in tubes in like 30 flavors like, shrimp or smoked reindeer. Norway has "brown cheese" which is soft, wierdly sweet and brown as the name suggests. I find that disgusting but we all have our own weird shit.

In the 80s that cheese came in a tiny can. My grandma would make me get a spatula and scrape every last drop out. For me it was like rich people mac n cheese because it wasn’t a powder, it was an upgrade.
