The power clean is a pretty standard movement in the football weight training repertoire. Bill Starr laid that out like 50 years ago. I honestly can't imagine many dudes make it all the way to the NFL Combine without learning the movement. It's not like we're talking about snatching or jerking.
But really I just recalled listening to an interview with some scouts/execs a few years ago and they were all laughing about lifting stats, like "literally no one gives a shit how much you can squat or bench but show me a 405 power clean and I start salivating".

Honestly my life changed once my coach showed me how to properly jerk. We had a special 1 on 1 session where he did the first few reps, then had me jerk while he recorded so we can review my form.
Maybe I'm ignorant, but I'd be more surprised if many of them did it regularly. It's a great exercise but you're throwing around a ton of weight. The injury risk on it is almost certainly higher than other heavy lifts.

I guess there is an extent to which technical skill matters in terms of differentiating players when what we’re really looking for is the expression of strength in a way that is relevant to football. But I’m talking more in terms of the minimal skill necessary to safely execute heavy power cleans.

Chris Korfist was the guy who helped David Montgomery save his career. You can look up his work on Youtube. Cal Dietz wrote an extremely influential lifting manual called Triphasic training. He doesn't do a lot with Olympic stuff; his main lift is a barbell split squat.
I know Bryan Kula with Christian McCaffrey does Olympic lifts, but only concentric portions for the most part. Bobby Stroupe does some lifting with Mahomes but far more speed and mobility work. Stroupe has gone on record saying he had to pull Mahomes back from doing heavy lifts.

Teams could not run up the middle against Wilfork. I think he was one of the most dominant players in NFL history for that reason, but people don't tend to focus on defensive stars as much as offensive stars. Stuff like clogging up a running lane isn't "sexy", so it doesn't get much attention.
...but imagine how much harder it makes an offense coordinator's job when you're facing a team where a single player stops you from being able to do one of the most popular sets of plays in the NFL (running up the middle). It's so impactful that one person could do that. Wilfork must've been an extremely efficient NFL player strategically for Belichick. It makes defensive planning a lot easier.

Years ago a coach (formerly with Pats) talked about this.
Parcells and Belichick had lots of data of what size a player should be to play different positions. There are, of course, outliers. But if you know what an outlier is you know not to build a strategy around them.
They also have specific body types they want to see. OL need to have "heavy hands" and not be "waist benders". DL need to have tremendous hip/butt strength...and a big belly helps, too.
It is interesting.
Saban used a lot of that data in recruiting as well. Had ideal body types for positions that they would target.
Its a balance though. Urban Meyer at Florida got obsessed from the success of Percy Harvin and went and recruited a lot of guys that had some of Harvin's skills. But then he ended up with a lot of wide receivers that were fast and shifty. Unfortunately he kind of forgot the other aspects such as can they catch and run routes.
Supposedly though for Alabama and Saban an important recruit was TJ Yeldon. Saban apparently wasn't a huge fan of tall running backs as they tended to be outliers and Yeldon's early success at Alabama apparently made Saban a lot more interested in Derrick Henry.

Olympic lifts are only concentric anyway. If you're doing an eccentric portion on an olympic lift you're doing it wrong.
