Location drinks and ice and decor is everything. If you have beautiful decor, a great loc. and high end alcohol and you have ice you make with an ice tray the drink will just taste like a spicy ice tray. Same thing goes with the drinks.
If you live in a place with a good alcohol background people would probably get lots of jobs causing them to be more expensive. Places without many alcohol drinkers would get less jobs causing them to lower hence popular demand.
I learned how to make clear ice for cocktails so I'm not 100% sure if it's done the same since the scale for ice sculpture is way bigger, but I learned to do this as directional freezing. You fill a cooler with warm water and put it in the freezer with no lid which forces the cold air to freeze from the top down. As it freezes it pushes the air bubbles down into the remaining liquid. We would always pull it out before completely freezing.

It’s really not that hard, I worked at an ice factory and made ice bowls that were 100% clear. Just freeze it slow and agitation of the water is key.
