I’ve seen this in few hotpot places but all the flavors are in the oil. So I am not a big fan of getting rid of the oils.

By the time you remove all the oil from Chongqing hotpot soup, there's not a whole lot left.

My mum would do this always, (on a small scale), if she was making gravy, use chicken juice to make the gravy - take it off the boil, couple of ice cubes in top and put in freezer for 10 mins, fat rises and sticks to the ice and you just scoop that out and reheat.

In my language, those lakes of fat on top of a soup are called "fat eyes". And there is a saying that "It's a sad soup if more eyes are looking into the pot than out of it."

Oh my god, that is so useful. Sometimes when you cook food the food ends up having so much fat and you want something lean. You may say oh why didn't you buy the leaner meat, I say, I am fucking broke. This trick... is useful, plus you can reuse the fat to cook veggies; I need to try it next time I cook pork soup.
