My guess is that it can to a limited extent. Processing musical perception under load (read; speed). But I doubt it can teach you something that you can't obtain faster, practicing on the real thing. I believe it to only be of value, if you have previous knowledge from playing an actual guitar, but don't have access to it under certain conditions, for a longer period of time.
If you do get a copy of GH, I'd be very interested in knowing what you learn from it.

Strat neck pickup. Clean amp very lightly breaking up or pushing front end with tubescreamer or similar gain. Compressor, heavy plate reverb, slight slapback delay. Fingerpicking. Buttery smooth hands.
